Coping with Christmas ......

 

Christmas can be a difficult time for some people with ME/CFS.  

Let us know your tips on how you cope/manage your energy levels and we can share them on here .... it may just help somebody else too! 

Home Baking .....
Mince Pies

I know you can  always buy mincepies from various places these days, but I like to do some Christmas home baking if I am able.

This is my favourite receipe because

  • it can be done in 2 stages at the start

  • I then freeze them uncooked

  • I can make batches of 12 or 24 and just cook from frozen when needed!

  • and I can then get a few out and just bake if we have visitors coming OR we just want a little seasonal treat at coffee time

 

Recipe:-

Makes 12

8oz (225g) plain flour

2oz (white vegetable fat (ie Trex or white flora)

2oz (50g) butter

about 2 tablespoons of cold water

mincemeat

1oz (25g) icing sugar

 

  1. Rub the fat into the flour until it is like fine breadcrumbs (I do this in the mixer to save energy)

  2. Add the water to mix and firm into a stiff dough (again in the mixer)

  3. Wrap in cling film and leave to rest in the fridge for about 20 minutes

NOW HAVE A 20 MINUTES REST YOURSELF TOO!

Then .....

  1. Roll pastry out thinly and with 3" (7cm) cutter make 12 rounds and press gently into pie tins.

  2. Place 1 teaspoon mincemeat into centre of pastry.

  3. Cut out 12 stars and simply place on the top of the mincemeat. (much easier than cutting 12 lids, damping round the edges, making sure you seal the top and bottom so they dont overspill!)

  4. Put in the FREEZER - in the tin!

 

NOW HAVE A REST YOURSELF FOR AS LONG AS YOU NEED! - OR MAKE A MONTH OR DAYS BEFORE YOU NEED THEM ETC

Once they have frozen you can take them out of the tin holes and put them all together in a box (we usually use a tupperware box or old icecream box)

 

When you feel able or when you need some  just get them out frozen and pop them back in a tin and cook!

  1. Cook for about 15 minutes until pale golden brown

  2. Cool on a wire tray

  3. Dust with icing sugar to serve

  4. Enjoy!

 

I can honestly stay I love getting these out frozen and just cooking them - the smell is lovely and I havn't exhausted myself trying to make them so I then NOT too tired to enjoy them!  Hmmmm Hmmmmm!

 

 

 

 

 

 

 

 

Christmas Presents & Wrapping Paper .....

BUY YOUR CHRISTMAS WRAPPING PAPER FIRST!!!!

Someone once suggested this to me - and its is a good idea! 

Yep not last - when you have got your presents!  

And here is why.....

  • Because if you have managed to go shopping and buy a few presents wrap them then (or the next day)

  • Then you dont have so spend a longer session at the last minute wrapping which I am always totally washed out and exhausted after!)

  • It's also not a ANOTHER thing of the list that you HAVE TO DO as it gets closer to Christmas - because it's don in stages

 

 

Going Out ....

I struggle to go out BUT  .....

  • If I have been invited OR there is something that I would really like to go to I put it on the calender

  • BUT I ALSO BLOCK OUT THE DAY BEFORE too - so that I know I need to rest that day and dont put something else down then too (or somebody else doesn't either!)

Try to have fun without all the fuss .....

.

One way to cope is to treat it like most other days, and try to have fun without the fuss.
